Dad's Corn and Hominy Casserole

One of Dad's recipes from when Elaine and I were little tykes.

Ingredients:
2 cans creamed corn
3 cans whole corn
1 can yellow hominy, drained
3 eggs, beaten
Salt, to taste (2 tsp.)
5 slices cheddar cheese
5 slices bacon
Pimiento
Paprika

1. Preheat oven to 375F.

2. Combine creamed corn, whole corn, and hominy together in a bowl. 

3. Add the beaten eggs and salt. Pour into a casserole.

4. Julienne the cheese and bacon. Place the cheese, bacon and pimiento in a checkerboard pattern over the casserole and sprinkle with paprika. 

5. Bake, uncovered, 30-35 minutes.
