A shortcut to making hollandaise sauce using the blender instead of whisking over a double boiler. The results are just as yummy!
Ingredients:
6 egg yolks
1/4 cup lemon juice
1/2 tsp. salt
1 cup (2 sticks) butter, melted
1. Place the egg yolks, lemon juice and salt in a blender. Blend over low speed.
2. Remove center of blender cover and, at high speed, very slowly pour in butter in a steady stream. Continue blending until well blended.
