Salmon with Asparagus, Garlic, Dill, White Wine and Lemon-Butter Sauce Baked in Foil

This is a quick, tasty and nutritious meal packaged into individual foil packets for easy serving. Asparagus is the veg of choice here, but you can also substitute with green beans, carrots, zucchini, broccoli, or anything that's in season. The minced garlic, lemon slices and fresh herbs perfectly complement the salmon.

Ingredients:
2 salmon filets
1 lemon, cut in half and sliced into rounds
2 cloves garlic, minced
1-2 tbsp. fresh dill, parsley and/or cilantro
2 tbsp. butter, cut into small pieces
2 tbsp. white wine
1 lb. asparagus, trimmed
Olive oil
Salt & pepper

1. Preheat oven to 450F.

2. Tear out 2 sheets of aluminum foil (about 15" x 12") and place them side by side on a baking tray.

3. Line the sliced lemons, equally portioned, down the center of each piece of foil. 

4. Season both sides of the salmon filets with salt and pepper, and place each on top of the lemon slices. Sprinkle the top of the salmon with the minced garlic, and fresh herbs. Top with the pieces of cubed butter and sprinkle each filet with a tablespoon of white wine. 

5. Place equal amounts of the trimmed asparagus spears on both sides of the salmon. Sprinkle with a dash of olive oil and season with salt and pepper. 

6. Gather the long side of the foil together, then crimp the sides until the foil packet is completely sealed.

7. Bake the packets on the baking sheet in the oven for 15 minutes or until the salmon is just cooked through.

8. Plate and serve.

Cubed butter, lemon, minced garlic and fresh dill.

Place the seasoned salmon on top of the lemon slices, then top with minced garlic, fresh herbs (dill in this case), cubed butter and white wine. Season the asparagus with salt and pepper and a drizzle of olive oil.

Seal the foil packets then bake at 450F for about 15 minutes or until the salmon is just cooked through.

Voila! Dinner is served.
