A really simple dish that works great as an appetizer. Pre-washed, bagged spinach works great because you don't have to spend a lot of time cleaning & prepping it.
Ingredients:
1 lb. bag of spinach
1 1/2 tsp. sesame oil
1/4-1/2 tsp. kosher salt (to taste)
1/8 tsp. sugar
White sesame seeds
Bonito shavings
1. Bring a large stock pot of water to a boil. Add the spinach and blanch for 1-2 minutes or until just wilted. Pour into a colander and rinse the spinach with cool tap water.
2. Using your hands, squeeze the spinach lightly until mostly dry. Place into a bowl and toss with sesame oil, kosher salt & sugar.
3. Place the spinach in a serving bowl or plate. Garnish with white sesame seeds & bonito shavings.

Drain & rinse spinach with cold tap water.
