Lorenzo's Dad's Ensalada Espanola

During my short stint at U.C. Berkeley in 1988, I had the pleasure of dining with Lorenzo's dad. Lorenzo was the significant other of my roommate's friend and classmate, Marie. Lorenzo's dad was the consummate Spanish gourmand who produced the following minor masterpiece at a great dinner we had over at the townhouse on Lincoln St. 


Ingredients:
Romaine lettuce, torn
Plum tomatoes, sliced
Onion, sliced
Green olives, sliced


Dressing:
1 clove garlic
1 egg yolk
olive oil
Lemon juice


1. Crush garlic in mortar. Add egg yolk and grind with pestle until thick and creamy.


2. Add drizzle of olive oil and 5-6 drops of lemon juice. Grind until thick and creamy.


3. Toss dressing with romaine lettuce leaves, tomatoes, onion & olives.
