My version of Bananas Foster, where the rum rules!
Makes 4 servings.
Ingredients:
1 stick unsalted butter
1/2 cup firmly packed light brown sugar
4 ripe bananas, peeled and halved lengthwise and crosswise
1/2 tsp. cinnamon
1/2 cup dark rum
4 scoops vanilla ice cream
1. Melt butter over medium low heat in a medium skillet. Add the brown sugar and stir until the sugar has completely dissolved.
2. Add the bananas and saute 3-4 minutes each side until tender.
3. Sprinkle cinnamon over the bananas & stir.
4. Remove the pan from the heat, pour the rum over, place back over the heat to ignite.
5. Baste the bananas with the sauce until the flame has extinguished.
6. Scoop ice cream into 4 bowls and top with the bananas and sauce. Serve immediately.
